Caponata à la Mom Amelia



Eggplants is one of the healthiest foods because it is very low in calories and also has lots of minerals and vitamins.

what you need:
  • 1/2 cup + 1 tablespoon olive oil
  • 1 eggplant diced
  • 1 cup diced onions (about 1 medium onion)
  • 1 cup diced roman tomatoes (about 3 tomatoes)
  • 1/4 cup green olives sliced
  • 1 teaspoon oregano
  • 2 tablespoons dried parsley (but fresh is always better)
  • salt and pepper to taste

what to do:

Heat oven to 350 F
Mix everything and place in an oven proof dish.
Cover with foil and bake for 1 1/2 hour.
Serve hot as a side dish or cold with toast as an appetizer.
