Pancakes


I like pancakes but for me they are only another excuse to eat berries, lots of berries, any kind of berries really. That's why I chose the picture above for this post's main picture.



But pancakes are a fun way to start your Sunday. It's really a naughty and delicious treat.

What You Need:

  • 2 1/2 cups flour
  • 2 tablespoons baking powder
  • 1 1/2 teaspoons salt
  • 3 tablespoons sugar
  • 2 cups milk
  • 2 eggs slightly beaten
  • 4 tablespoons melted butter
  • 2 teaspoons vanilla 
Makes about 10 pancakes.


What To Do:






Gather your ingredients







In a large bowl sift the flour, baking powder salt and sugar.





Make a hole in the middle.





Pour the milk, eggs, butter and vanilla.
(I should have beaten the eggs previously but I FORGOT! Ahhhhhh, the pancakes still worked but they could be better)






Mix until smooth (use a whisk). The batter will be a little lumpy.





Place a non-stick frying a pan over 'medium' heat and spread one teaspoon of cooking oil with a paper towel. This way the pan is coated with oil without any excess. Wait about half a minute for the pan to heat.





 Using a ladle put 1/4 cup batter on the frying pan.





To estimate how much 1/4 cup is in your ladle, put 1/4 cup of water in the ladle. That will give you an idea of how much batter to scoop.






 The batter will begin to bubble.






 Wait until the sides of the pancake dry.






Use a silicone spatula to lift the side of the pancake to check if it is browned.






Turn it with a wide spatula and cook the other side. 




Before you remove the pancake from the pan you can check if the pancake is cooked inside by making a little cut in the middle of the pancake with a thin silicone spatula. Press the side of the cut to see if the batter will run out. If not, then it's ready!!!




You do not need to oil the pan again to make the next pancake. Just put more batter on the pan.
You might need to turn down the heat a little if the pancake gets dark too quickly.

There are soooo many ways to eat pancake.
The traditional way is with maple syrup but honey will work as well.
I love mine with fresh berries as I said. It gives me the illusion that pancakes are healthy.

And if by any chance you have leftovers, wrap the pancakes individually in plastic wrap and put them in the freezer.
The next time you feel like having pancakes (please do not eat them every day) put them in the microwave or in a toaster if you like them crispy.
