veggies frittata college style


One commonality between busy and lazy people is that they usually don't like spending time in the kitchen. Whatever category you fall into here is a healthy frittata recipe for you. I called it Frittata College Style because college people are often both: busy and lazy. I make this frittata a lot for Sunday brunches. As everyone knows Sundays are the typical busy people lazy days. Keep reading. It's a short intro for obvious reasons.


Frittata is the Italian cousin of the American omelet. However you start the recipe on the stove top and finalize it in the oven.

You can choose not to use fresh onions and use powdered onion instead but I highly recommend using chopped onions. As I have mention before it's not that hard to chop an onion. Go to this link How to Peel and Chop an Onion.

FYI
  • If you have a non-stick pan you can use less olive oil.
  • You can use green onions, chives, parsley or whatever herbs you like.
  • You can use any onion, red, yellow, etc. or shallots.
  • If you don't really like onion you can skip the onions, chopped or powdered. 
  • If you don't have a whisk use a fork to beat the eggs.
  • Use a pan that can go in the oven. Most pans can, besides the pan is going to stay in the oven for a couple minutes only. 
  • I like to chop and freeze green onions so I always have some when I need it.
  • last but not least, if you are not lazy at all then you can use fresh organic veggies. 

What You Need:
  • 4 eggs slightly beaten
  • 1/4 cup shredded Parmesan cheese
  • 1 cup frozen vegetables
  • 1 tablespoon fresh (or frozen) green onions or chives OR 1 teaspoon dry green onions or chives
  • 1/4 cup chopped onion or 1/2 tablespoon powdered onion
  • salt and pepper to taste
  • olive oil or coconut oil enough to coat the bottom of the pan
What To Do:


Prepare all ingredients before you start cooking.
Mix the cheese, herbs, salt and pepper with the eggs.
If you are not using chopped onions then add the powdered onion to the eggs. 
Or skip all onion forms all together :(




Put oil in a medium size pan over medium high heat. 
If you are using a non stick pan 1 tablespoon oil should be enough. If not then use 2 tablespoons.
Add the onions and sauté until the onions change color. About 2 minutes.


 


Add the frozen veggies and cook them for the amount of time suggested on the package/bag. Usually about 8 minutes








Turn on the broiler in the high set.


Add the eggs to the cooked veggies.
Cover all veggies with eggs.










Move the eggs to the side preferably using a silicone spatula and let the uncooked eggs roll under so they get cooked.


 

Put the pan in the oven so the eggs cook on top. It might take from 1 to 3 minutes.
Leave the handle of the pan sticking out of the oven as much as you can.

Note: I didn't magically change pans. Those pics are from another day. 


  



Leave the oven door a bit open.
Oven doors usually have a setting that leave them open for about 4" for broiling purposes. Car doors have similar settings.
Keep watching your frittata. 








When the eggs are all cooked on top then it's ready!

Well, yes you can. Let it cook for a few seconds only. But it will not look the same.
