Surprisingly tasty!
What you need:
- 2 tuna cans in water, well drained and flaked with a fork.
- 2 tablespoons mayonnaise (make them crispy)
- 2 teaspoons Dijon mustard
- 1/4 cup almond flour (see notes below)
- 2 tablespoons fresh parsley (dry works as well)
- 2 tablespoons green onions (see notes below)
- 1 egg
- 2 garlic cloves pressed
- salt and pepper to taste
- olive oil to fry
- lemon wedges, for serving
Notes:
- Instead of almond flour you can use regular flour, chickpea flour, crushed white bread, bread crumbs, crushed saltines or crackers.
- Instead of green onions you can use sweet onions, or chives or shallots.
- They are a bit flaky so careful when you turn them when frying. They are less flaky if you use a fine flour like regular flour or chickpea flour.
- You can eat them like a burger.
- If the mix is still too soft try adding more flour / bread crumbs / crackers to absorb the moisture.
Yields 4 or 8 tuna patties depending of the size of patties you make.
What to do:
- In a medium bowl, mix well all ingredients but not the oil.
- Divide into 8 equal parts, about 1/4 cup each.
- To make the patties form a ball and then flatten with your hands.
- Heat the oil and fry the patties for about 3 to 4 minutes each side.
