vegetarian zucchini boats

zucchini boats with veggies

I love this vegetarian zucchini boat recipe because it is so versatile. It is great to have on its own, or as a side for any meal.

Thursday

glazed and creamed carrots

This glazed carrots recipe was taken from my cooking bible the "Escoffier Cook Book, A Guide to the Fine Art of French cuisine" (the English version). I can't put in words how delicious these carrots are and I can't take a picture that will do it justice. You simply need to try it!

Sunday

Carrot Ricotta Sandwich or Spread

Carrots + ricotta + mayonnaise make a great dip or filling for a sandwich.

Thursday

Sweet Potatoes and Carrot Creamy Soup

This soup is creamy, smooth and has a blend of sweet and sour tastes that will make you sigh. The scent of the spices will take over your house and don't be surprise if a neighbor or two will knock on your door. Great for a rainy cozy day any time of the year. Not the neighbors, the soup. Actually it depends on thy neighbors. It does not depend on the soup cause if you follow this recipe it will be gooooood!

Saturday

Easiest Chicken Stew Ever

This is a recipe dedicated to my son who thinks peeling and chopping an onion is worse than cleaning cat litter box. So no chopping onions and neither crushing garlic. My solution to have this chicken have some taste is to use the 'Traditional Marinara Sauce' that I get at Trader Joe's . I'm obsessed with this sauce. Why? Because of the ingredients it does not have. It does not have sugar and neither any artificial color, flavor or preservatives. Can you believe that? Of course seasoning the chicken with soy sauce also helps to add more taste to this dish.

Tuesday

Chicken Stew Brazilian style / Ensopado de Galinha

There are so many recipes of chicken stew and it all comes down to how you season the chicken and the spices and seasonings you use. Garlic, onion and tomato are usually the basis of my cuisine, which is very common in Brazil, at least in Rio where I come from.

Sunday

Buttered Carrots with Onions

So delicious! If you love steamed vegetables as much as I do you will fell no guilt to indulge in those buttered carrots with onions once in a while.

Saturday

egyptian red lentil soup / Shorbaat Aads

I love this soup and it is so so easy to make. I learned this recipe while I lived in Egypt and I adapted it to my palate. My recipe does not have cumin neither turmeric, which are common spices in Egyptian cuisine. If you like them then go ahead and add them. The most important thing is to follow you palate.
There are many versions of this soup. This is a very simple one. The way my kids like it.
