Ridiculously Easy Cabbage Soup

I promised I was going to post a ridiculously easy version of the cabbage soup and here it is.

This is a true bachelor's dish. You will not feel that you are cooking. It's almost like cheating cooking.

You just need to buy 3 things and put them together. That's it! And like the not so easy version of cabbage soup it is lean and healthy.

I got all three ingredients at Trader Joe's and the measurements are perfect. Nothing to add and nothing to put away. You will use it all. You can find the same things in other markets.

What You Need:

  • 1 carton chicken broth 32oz
  • 1 bag shredded cabbage 10oz
  • 1 bag Vegetable Medley 12oz

Instead of the chicken broth you can use 4 cups water and 2 cubes of chicken bouillon.

What To Do:

Wash the cabbage under running water. Use a colander or sifter. Reserve.

You can use the veggies as they come in the package but I prefer to cut them in smaller pieces. Bachelors can easily skip this step.

Put everything in the pan.
The broth.

The cabbage.

The veggies.

Bring it to a boil.

Reduce heat to the lowest setting and cover the pan.
Let it cook for 25 minutes.
Check if it has enough salt.
You can also add a little black pepper.

Bon Appétit!

Lean and Nutritious Cabbage Soup

This soup is great if you want to shed a few pounds. It's low in calories, nutritious and it fills you up! Just resist the temptation to top it with a million croutons or eat loads of bread with it. A slice or two of whole wheat toast bread is a wiser choice.

Monday

Russian Borscht

I learned this recipe from a Russian friend when I lived in Finland. It was a family recipe. She said her grandmother told her that a Borscht did not have soul if it did not have meat. The meat her grandma used was not 'beef for stew' as it is in my recipe. However since I got this recipe I wrote down 'beef for stew' as I adapted for my taste and I do not remember what she used. Her grandma also used to make her own beef stock. I am sure my soup will never taste like hers but it tastes pretty good. Good enough for my kids to ask for it over and over again. Enjoy!
