A quesadilla is actually a wheat or corn tortilla filled with a savory filling and folded in the middle. So the end shape is a half circle. But there is so much you can do with those tortillas and why not have a mix of sweet and sour like my recipe? I also think that by frying the quesadilla gives it extra flavors and color.

Easiest Chicken Stew Ever


This is a recipe dedicated to my son who thinks peeling and chopping an onion is worse than cleaning cat litter box. So no chopping onions and neither crushing garlic. My solution to have this chicken have some taste is to use the 'Traditional Marinara Sauce' that I get at Trader Joe's . I'm obsessed with this sauce. Why? Because of the ingredients it does not have. It does not have sugar and neither any artificial color, flavor or preservatives. Can you believe that? Of course seasoning the chicken with soy sauce also helps to add more taste to this dish.

There are so many recipes of chicken stew and it all comes down to how you season the chicken and the spices and seasonings you use. Garlic, onion and tomato are usually the basis of my cuisine, which is very common in Brazil, at least in Rio where I come from.

Ridiculously Easy Low-fat Healthy Pan Grilled Chicken

All you need for a delicious low-fat (the magic word), healthy (another magic word), pan grilled chicken is to marinate the chicken in Soy Sauce and grill it on a grill pan. That's all. If you don't have a grill pan I highly recommend getting one.

Easy Chicken in Beer


A lot of people get scared when they look at a recipe and there are more than 6 ingredients. Well this does not happen in this recipe unless you want to get creative, which I did a tiny little bit.

What You Need:
  • 1 lb chicken cut in small pieces (you can also use legs and thighs)
  • 1 packet of onion soup
  • 1 can beer - I like Coors Light but any light beer works
  • 1 tablespoon butter to fry the chicken

Optional:
Add baby carrots after you put the beer and let it cook together.
After the chicken cooks add 1 small can of mushrooms drained and 1 tablespoon dried parsley, or fresh of course. I love to add parsley to this dish because it adds color besides taste.

What To Do:





Gather your ingredients.







 Melt the butter in a large saucepan over high heat.
Let it brown but not too much.







Add the chicken.








Keep stirring to cook the chicken in all sides.






Cook until the all the pieces turned from pink to beige. As the chicken cooks it might release a little bit of liquid, which is normal. Do not wait for the liquid to dry to add the onion soup.








Add the onion soup and mix.








Add the beer. It will bubble.








Let it boil then reduce the heat to low.








Cover the pan leaving a little gap. Let it cook for 35 minutes.






The liquid will reduce.
Add the drained mushrooms and the parsley and it's ready.
It is really easy.





Serve with rice and a vegetable of your choice.
In the picture the chicken is served with whole grain basmati rice and Spinach Pots.

Chicken and Apple Salad


Salads are wonderful because you can mix anything you like to discover how the flavors work together.


Here is one of my favorites mixes:







Lettuce of your choice (enough to make a bed for the rest)








Cucumber cubed (1/2 cup)








Chicken breast (cooked - 1/2 cup chopped)









Apples cubbed (1/2 cup chopped)







Walnuts (1/4 cups)








Raisins (2 tablespoons)








topped with
Balsamic Vinaigrette.
