Spaghetti squash is like magic to me. A veggie that turns into pasta! It sounds too good to be true. But it is true. Well, not really. The taste is not the same as pasta obviously. But it's delicious. And the texture is fabulous.
I think couscous is underrated in many countries. It is so quick and easy to prepare a delicious and nutritious dish with couscous as a base and your choice of veggies and meat. If you have never tried to make a couscous dish here is a simple and healthy recipe for you.
One commonality between busy and lazy people is that they usually don't like spending time in the kitchen. Whatever category you fall into here is a healthy frittata recipe for you. I called it Frittata College Style because college people are often both: busy and lazy. I make this frittata a lot for Sunday brunches. You want to know how to make a Stir Fry? A Chicken and Vegetables Stir Fry? Mom Amelia will teach you.
Stir Fry is a traditional way of cooking Asian food that means frying in hot oil while tossing them around in a wok. I love stir frying! I move those veggies in the wok very seriously pretending I'm way more skilled than I really am. There are actually different stir fry techniques, but they are beyond my understanding.
I promised I was going to post a ridiculously easy version of the cabbage soup and here it is.
This is a true bachelor's dish. You will not feel that you are cooking. It's almost like cheating cooking.
You just need to buy 3 things and put them together. That's it! And like the not so easy version of cabbage soup it is lean and healthy. I got all three ingredients at Trader Joe's and the measurements are perfect. Nothing to add and nothing to put away. You will use it all. You can find the same things in other markets. What You Need:
1 carton chicken broth 32oz
1 bag shredded cabbage 10oz
1 bag Vegetable Medley 12oz
Instead of the chicken broth you can use 4 cups water and 2 cubes of chicken bouillon.
What To Do:
Wash the cabbage under running water. Use a colander or sifter. Reserve.
You can use the veggies as they come in the package but I prefer to cut them in smaller pieces. Bachelors can easily skip this step.
Put everything in the pan. The broth.
The cabbage.
The veggies.
Bring it to a boil.
Reduce heat to the lowest setting and cover the pan. Let it cook for 25 minutes. Check if it has enough salt. You can also add a little black pepper.
This soup is great if you want to shed a few pounds. It's low in calories, nutritious and it fills you up! Just resist the temptation to top it with a million croutons or eat loads of bread with it. A slice or two of whole wheat toast bread is a wiser choice.
