Cashew Spread

 

A great substitute for cream cheese.


Ingredients:

  • 150 gr cashews
  • 1 tbsp extra virgin olive oil
  • 1 tbsp juice for lemon about 1/2 lemon
  • 1 garlic clove pressed
  • 150 ml vegetable stock or water
  • 1 tbsp nutritional yeast
  • salt and pepper to taste 

  • finely chopped parsley and chives, amount to your liking


What to do:

Simmer cashews for about 30 minutes and drain.

Add all ingredients (but not the parsley and chives) to a blender and blend until smooth.

Mix chopped parsley and chives.

Put in a container in the refrigerator for about 4 hours before serving.
