A versatile and hearty sauce with a rich and balanced flavor.
Ingredients:
- 5 to 6 tomatoes
- 1/2 onion finely chopped
- 2 garlic cloves pressed
- 1 or 2 carrots cut in small cubes
- 2 tbsp olive oil or enough to cover the bottom of the pan
- 2 cups of spinach finely cut
- chopped parsley and chives
- salt and pepper to taste
- 1/2 tbsp corn flour dissolved in 1/3 cup milk
What To Do:
Wash and cut the tomatoes in half. Remove the 'eyes' of the tomatoes with an apple corer or knife.
Sautee the onion and garlic over medium heat.
Add the tomatoes cut side down, in a single layer with the carrots.
Cook them until the tomato peels can be removed with tongs.
Smash everything with a potato masher.
Add milk with corn flour and stir until it thickens.
Add the spinach, parsley and chives and stir.
Pour over a favourite pasta, rice or potatoes.
