Protein Chocolate Vegan Bites

 

This is a variation of the Chocolate Protein Bar using only Vegan ingredients.


Ingredients:

  • 65 grams almond flour
  • 65 grams peanut butter
  • 13 grams vegan protein powder
  • 14 ml plant base milk
  • dash of Stevia or use the sweetener of your choice


Optional

Add crushed nuts to the dough

Add 1/2 tablespoon 100% cocoa to the dough


for the ganache:

  • 40 grams vegan chocolate
  • 12 grams peanut butter

Yields about 15 to 20 units.


What To Do:

Mix all ingredients in a bowl. Use a fork first then use your hands.

Make little balls with about 1 1/2 teaspoons of the dough. 

Shape the balls into thick disks and place them on parchment paper.

For the ganache, melt the chocolate in a bowl in the microwave, heating for 30 seconds at a time. It will take about 1 1/2 minutes.

Mix 12 grams of peanut butter.

Spoon the ganache over the disks. 

Refrigerate for about 2 hours before serving.

Keep in the refrigerator in a sealed container.


Optional: 

Place nuts on top.

Dip the disks in the ganache to cover it completely. If deciding to cover the whole disk with the chocolate ganache, increase the amount of the ganache ingredients. Use 50 grams of vegan chocolate and 15 grams of peanut butter.
