Spaguetti Squash





Spaghetti squash is like magic to me. A veggie that turns into pasta! It sounds too good to be true. But it is true. Well, not really. The taste is not the same as pasta obviously. But it's delicious. And the texture is fabulous.

Notes
The most difficult part of this recipe is to cut the squash in half because squash is really hard. I usually microwave it
 for about 3 to 5 minutes so it is easier to cut.


what you need:
  • 1 spaghetti squash
  • pasta sauce of your choice 
Serving Options:
  • Pasta sauce of your choice.
  • Bolognese sauce - Check out the Easiest Bolognese Sauce Ever.
  • Melted butter and shredded Parmesan or Asiago cheese. 
  • Crushed garlic sauteed in olive oil.
 Serves 2

what to do:

- Preheat oven to 450F.
- Wash the squash under running water using a sponge to remove dirt or any debris.
- Place the squash on a cutting board and cut it lengthwise. 
- Insert knife in the middle of the squash. Carefully work your way to one end and then to the other.  Continue to cut the squash around until it's split in half.



Place the squash, cut side down, on a baking dish with enough hot water to cover the bottom (about 1/2 inch).
- Let it bake for 30 to 40 minutes. Time in the oven will depend on the thickness of the squash.
Start checking the squash after 30 minutes. The outside should be a little soft to the touch of a wooden spoon. 
- When it's done remove the squash from the oven and put on a cutting board cut side up.



- When is cool enough to be handled, use a spoon or a fork to scrape the squash removing all the spaghetti-like strands and place them in a plate where you will serve it.
- Top it with your favorite sauce or place it on top of the sauce.
- Serve it right away.
