Bean Vegetable Soup


This black beans soup is healthy, quick and easy to make. 


You can vary the amount of vegetables according to your liking and use cooked beans. I normally cook 1 kilo of beans at a time and freeze them in bags corresponding to 1 can of store bought beans.


What You Need:

  • 1 can black beans
  • 1 tablespoon olive oil
  • 1 small onion
  • 3 pressed garlic cloves 
  • 1 cup chopped carrots
  • 1 cup cubbed sweet potatoes
  • 1 cup finely sliced spinach
  • 1 can cubbed tomatoes with sauce
  • 3 cups vegetable or chicken broth (more or less to your liking)
  • salt and pepper to taste


Notes:

  • You can use other types of beans instead of black beans.
  • You can use other types of beans as well.
  • You can add other vegetables such as canned corn, celery, and bell pepper.


Want to do:

Heat olive oil and saute onion and garlic 

Add carrots and sweet potatoes and sauté for a couple of minutes.

Add broth, and tomato cubes. 

Let it boil and then simmer for 10 minutes.

To thicken the soup and give it a nice consistency, remove 1 1/2 cups of the soup and blend well. Return it to the pan.

Add the spinach and stir until wilted.

Taste for salt and pepper and add it to our liking
