Delicious and packed with delicious flavours! Vegan and gluten free!
what you need:
- 2 tbsp olive oil
- 1 small onion chopped
- 4 garlic cloves crushed
- 1 tbsp grated ginger
- 1/2 tsp black pepper
- 2 tsp tomato paste
- 1 tsp sweet paprika
- 1 can cubed tomatoes with juice
- 4 cups chicken stock
- 1 1/2 cups cubed sweet potatoes
- 1 can chickpeas drained OR 1 1/2 cup cooked chickpeas
- 1 cup creamy peanut butter
- 4 cups finely cut spinach
- 1 tsp salt if needed
what to do:
- Sauté onion and garlic with oil in a saucepan
- Add ginger, pepper, tomato paste, and paprika.
- Add cubed tomatoes, chicken stock, potatoes and chickpeas and simmer for 15 minutes.
- Add peanut butter and spinach and simmer until the spinach is wilted.
- Taste for salt and add some if necessary.
