African Peanut Soup


Delicious and packed with delicious flavours! Vegan and gluten free!


what you need:

  • 2 tbsp olive oil
  • 1 small onion chopped
  • 4 garlic cloves crushed
  • 1 tbsp grated ginger
  • 1/2 tsp black pepper
  • 2 tsp tomato paste
  • 1 tsp sweet paprika
  • 1 can cubed tomatoes with juice
  • 4 cups chicken stock
  • 1 1/2 cups cubed sweet potatoes
  • 1 can chickpeas drained OR 1 1/2 cup cooked chickpeas
  • 1 cup creamy peanut butter
  • 4 cups finely cut spinach
  • 1 tsp salt if needed


what to do:

  1. Sauté onion and garlic with oil in a saucepan
  2. Add ginger, pepper, tomato paste, and paprika.
  3. Add cubed tomatoes, chicken stock, potatoes and chickpeas and simmer for 15 minutes.
  4. Add peanut butter and spinach and simmer until the spinach is wilted.
  5. Taste for salt and add some if necessary.
