Dried Apricot Coconut Balls



Easy and delicious!


what you need:

  • 240 grams dried apricots
  • 60 grams coconut flakes
  • 60 grams almond meal
  • 2 tbsp maple syrup or honey
  • 1 teaspoon vanilla
  • 200 grams chocolate pieces or chocolate chips


what to do:

Place apricots in a container and cover with boiling water. Let it stand for 5 minutes. Drain well.

Place the apricots in a food processor and process until there are only small pieces.

Add the coconut, almond meal, honey and vanilla.

Blend until well combined. If it's too dry add water, one tbsp at a time.

Form 1 inch balls with your hand or a spoon and roll them in coconut flakes. Leave them in the refrigerator for 10 minutes.

Melt the chocolate in the microwave by adding 30 seconds at a time and stirring after each 30 seconds. You might need about 2 minutes.

Dip half of each apricot ball in the chocolate.


ANOTHER OPTION:

Instead of rolling the balls in coconut, just form the balls, keep in the fridge for 10 minutes and then cover them completely with cholotate. You can use a fork for holding the balls and dip them in the chocolate.
