- 1 lb chicken breast cut in bite size pieces
- 1 tablespoon coconut oil
- 150 ml sweet chili sauce
- 1 tablespoon fish sauce
- 2 teaspoons soy sauce
- 1/2 teaspoon dry coriander
Notes:
- Cut the chicken in bite size pieces. No need to rinse your raw chicken Here is why.
- For a more refined version use fresh coriander and also sprinkle chicken with toasted sesame seeds and fresh scallions or chives.
what to do:
- Heat the oil and cook the chicken over medium high heat for about 5 minutes or until almost fully cooked. It does not matter if if releases liquid as you are not really browning it.
- Add the rest of the ingredients, (chili sauce, fish sauce, soy sauce and coriander).
- Mix and let it cook for about 1 to 2 minutes until the chicken is fully cooked and the sauce it thick and coats all the pieces.
