Sautéed Zucchini and Yellow Squash



Zucchini and yellow squash are a great combination for a side dish. You can add cherry tomatoes and grated Parmesan before serving.


what you need:

- 1 tablespoon butter

- 1 tablespoon olive oil

- 2 small zucchinis cubed

- 2 small to medium yellow squash cubed

- 1/2 onion chopped

- 2 garlic cloves crushed.

- salt and pepper to taste



what to do:







- Heat the butter and sautéed the diced onion over medium heat until it’s translucent. Reserve.










- On the same pan heat the oil (medium heat) and add the zucchini and squash. 


- Leave it without stirring for about 3 minutes so it can turn golden.







- Add the garlic, salt and pepper to taste and stir well. 












- Leave without stirring for 2 minutes.


- Stir again and let it cook until it’s soft but not mushy.


- Add the onion, which will help deglaze the pan.


- Turn off heat and serve immediately.
