Vegetable Soup


Vegetable soup is a delicious and healthy comfort food.
Try to prepare the vegetables quickly (without accidents of course) and if you are really lazy there are some tips below for you.

Ingredients:

  • 1 cup carrot (peeled/chopped)
  • 1 cut broccoli (chopped)
  • 1 cup cauliflower (chopped)
  • 1/2 medium onion (sliced or chopped)
  • 1 cube of chicken bouillon 
  • 1 1/2 cups water
  • olive oil
  • salt and pepper to taste



What to do:

  1. Put the oil and onions in a medium size pan on medium high heat.
  2. The oil will heat and you need to keep stirring, turning the onion until it becomes transparent in color. I could just have said "Sauté" the onion.
  3. Add the vegetables and 'sauté' them for about 2 minutes.
  4. Add the water and 1 cube of chicken bouillon 
  5. Smash the cube with a wooden spoon and stir until it dissolves.
  6. Bring the whole thing to a boil.
  7. Reduce heat, cover the pan and let it simmer for 10 minutes. (remember simmer?)
  8. Turn off the heat and smash everything with a potato masher. (careful it is HOT)
  9. Taste and add salt and pepper as you like.


Add Yuminness:
 Add leftover chicken.


Add leftover chicken AND / OR shredded cheese. Any cheese you like, really. 
I added Monterey Jack on the pic above but  I also like Parmesan or little pieces of Brie.

If you are really LAZY:
Buy shredded carrots and broccoli florets. You might even find cauliflower florets.
OR use frozen vegetables

What is this?
Sauté - is a way of cooking food that uses little amount of fat (butter, oil, etc) over relatively high heat. The ingredients are usually cut in pieces. You keep stirring and tossing the ingredients while they cook.


What To Do with Pics:
