Ridiculously Easy Rice

 
You know those lazy days when you feel like doing nothing let alone cooking? Well this is the day to make this rice and pair it with the 'Easiest Chicken Stew Ever'.





All you need is one cup of rice, two cups of water and one cube of chicken or vegetable bouillon.
One cup of uncooked rice will yield 3 cups of cooked rice and it will serve 2 to 3 people.








Wash the rice under running water.






Put the rice, bouillon and 2 cups water in a pan over high heat. Stir occasionally.





Let it boil. Stir.





Reduce the heat to the lowest setting, cover the pan and let it simmer for 18 minutes for white rice and 40 minutes for brown rice, which is the one I am using for this post.






That's all you need to do, isn't it ridiculously easy?





If you want to do 2 cups of rice just double the amount of water and use 2 cubes of bouillon.

For a healthier version use organic chicken broth instead of chicken bouillon and water. The proportions are the same, for 1 cup of rice use 2 cups of chicken broth. 

Chicken Broth is sold in cartoons similar a milk carton. I really like the organic chicken broth from Trader Joe's.
