Vegan Super Nutritious Pasta Sauce



 
Super easy and full of nutrients 😀


What you Need:

  • 1/2 chopped onion
  • 2 garlic cloves crushed
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon coconut oil
  • 1lb 8 oz (1 jar) of Classico Tomato and Basil sauce or your favorite pasta sauce
  • 8 - 10 oz shredded carrots
  • 5 oz thinly chopped spinach (frozen works as well)
  • 1 can corn
  • 3/4 cup High Protein TPV from Bob's Red Mill

Optional

  • 1/2 tbsp Trader Joe's Umami seasoning (Mushroom & Company Multipurpose Umami Seasoning Blend)
  • 15 frozen pearl onions
  • any favorite spice


What To Do:

1 - Sautee onion, garlic, and ginger in the coconut oil.

2 - Add the pasta sauce, carrots, spinach (and any optional seasoning) and cook for 15 minutes stirring occasionally.

3 - Turn off the heat and add the corn and the TPV. Let it sit for 10 minutes so the TPV hydrates.

4 - Mix well and taste for salt and pepper. 


Serve over pasta, rice, quinoa, or toast.

Note: Store in well sealed jars in the refrigerator.
