Roasted Sliced Sweet Potatoes


Roasted vegetables are one of my favorite things and this goes for sweet potatoes as well. It is the same basic recipe of coating vegetables or potatoes with a mix of olive oil salt and pepper and placing them in the oven for 20 to 30 minutes.


Time in the oven will vary according to the thickness of the potato slices.


what you need:

- sweet potatoes

- olive oil (1 tablespoon per potato)

- salt and pepper to taste

- Optional: add any favorite seasoning, such as chili powder or cumin. 


what to do:

Preheat oven to 450 F.




Peel and slice the potatoes. I slice mine thin, about 1/4 inch.

Put olive oil, salt and pepper in a bowl. Add the potatoes slices and toss them until they are all coated.

Place the potato slices in a large sheet pan covered with parchment on a single layer. Do not overlap them.

Bake for about 20 minutes, turning the slices after 10 minutes.

Serve immediately.
