What You Need:
- 12 to 16 oz baby zucchinis (or any zucchini - see notes)
- 2-3 garlic cloves crushed
- 3 tablespoons olive oil
- half teaspoon herbes de Provence or oregano
- salt and pepper to taste
Notes:
- If the zucchinis are not pre washed, then wash and pat dry them.
- You can use the same method of baking and seasonings with regular zucchinis making sure they are not over 1/2 inch thick.
- Oven time will vary depending on the thickness of the zucchinis. Start with 12 minutes then check every two minutes.
- The picture below has a ruler so you can see how small these zucchinis are.
What To Do:
Preheat oven to 375F.
Place all the seasonings in a medium size bowl.
Place the zucchinis in the bowl and toss them, making sure they are well coated.
Arrange them on a cookie sheet not touching each other. Add any garlic left in the bow on the zucchinis.
Place them in the oven for 12 to 15 minutes.
Keep checking after 12 minutes. They should be tender but not mushy.
