The Portuguese 'Doce de Abobora' has walnuts, which adds an interesting texture to it. My recipe like many others uses the juice and peel of one orange, which gives more depth to the flavor.
what you need:
- 1 kg / 2lbs pumpkin peeled, seeded, cut into cubes
- from 250 to 400 gr sugar (0.5 to 0.9 lb)
- 3 cloves
- 1 cinnamon stick
- 1/2 to 3/4 teaspoon powder cinnamon
- 1 orange
- 3.5 oz / 100 gr chopped walnuts
what to do:
Cut the orange in half and squeeze it. Reserve the juice. Cut each half of the peel into four pieces. Reserve.
Place everything except the walnuts in a large pot over medium high heat.(pumpkin, sugar, cloves, cinnamon stick, cinnamon powder, orange juice and orange peels)
Once it boils turn the heat down and let it simmer for about 50 minutes.
Stir occasionally. After about 20 minutes you can use a soft spatula to help mash the pumpkin cubes. Cook as much as you need to reduce the pumpkin sweet to your desired consistency.
Turn off the heat and remove the orange peels, cloves and cinnamon stick.
Add the walnuts and stir.
Serve with your favorite cheese or with bread like if it was jam.
