what you need:
1 kg quince
300 grams sugar
1 tablespoon lemon juice
3/4 cup water
2 cups of water and 1 tablespoon of lemon juice to keep the quince pieces while you peel and cut them
Notes:
Add more sugar according to your taste. For me the right proportion of quince to sugar is -> sugar is a third of the weight of quince.
The most challenging part of this recipe is to peel and cut the quince. I peel using a vegetable peeler and cut with a large chef knife.
what to do:
Peel and cut que quince in small pieces and place them in a pan with about 2 cups water and one tablespoon lemon juice.
Strain the quince pieces and place them in a pan with the sugar, water and lemon.
Let it boil then simmer for about 20 minutes or until the quince pieces are soft but not falling apart.
Conversely you can use an immersion blender for a jam consistency.
Serve with cheese, over bread, with yogurt or by itself.
