This is a variation of the Polish pickled beets.
what you need:
- 500 gr beets cooked, peeled and drained
- 120 ml ml balsamic vinegar
- 1 small onion thinly sliced
- 1 garlic clove smashed
- 1 bay leaf
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
what to do:
Shred the beets or use a food processor to grind in small bits, which was my choice for the picture above.
Place vinegar, onion, garlic, bay leaf, salt and pepper in a small saucepan and simmer for about 5 minutes.
Remove the bay leaf, drain the vinegar and mix it with the beets.
Place in a glass jar.
Let it sit in the refrigerator for about 6 hour before eating.
