Zucchini and Spinach Soup



Let's bring zucchini and spinach together for a delicious and healthy soup.


what you need:

1 kg (2lb) zucchini

300 gr potatoes cubed OR 1/3 cup well rinsed quinoa

4 cups spinach

1 onion chopped

3 garlic cloves chopped

3 1/2 cups vegetable or chicken stock

salt and pepper to taste


Optional: 1/2 cup heavy cream


Note:

- If you feel necessary to thicken the soup add 1/4 cup milk and 1 1/2 tbsp cornflour and let it simmer to thicken.


what to do:

Saute onions and garlic on oil over medium heat.

Add stock and potatoes, and zucchini. Simmer for 15  minutes.

Add spinach and simmer for 5 more minutes.

Puree with a hand blender until smooth.

Add heavy cream if using and stir but do not let it boil.
