Pea Paste & Tomato on toast



Pea Paste

what you need:

  • 250g frozen green peas 
  • 1/4 cup tahini 
  • 1/4 cup lime or lemon juice
  • 2 tbsp olive oil
  • garlic clove mashed
  • 2 tbsp chopped fresh parsley
  • salt to taste 
  • white pepper or chili flakes to taste
Note: this pea paste is basically a hummus recipe but instead of chickpeas you use peas. 

what to do:
- Boil peas in water with 1 teaspoon of salt for about 4 minutes, or until they are soft.
- Drain and reserve.
- Place tahini, lemon juice, drained peas, garlic, and olive oil in a food processor and process to desired texture.
- Add parsley, salt to taste and whatever else you choose. The right amount of seasoning is crucial to the taste of the pea paste and it depends on your taste.


Tomato topping

- 2 tomatoes
- 1 tbp your favourite pesto
- salt and pepper to taste

Chop the tomatoes in small cubes and mix the pesto. Taste and add salt and pepper if you feel the need. 


How to Serve:
Spread the pea paste on your choice of toast, cracker, baguette, etc, and top with the tomato & pesto mix.
BUT you don't really need to add the tomato topping. Just the pea paste tastes really good :)
