Homemade is great because you can adjust the ingredients to your taste.
what you need:
- 250g (1 can) chickpeas
- 1/2 tsp baking soda
- 1/4 cup tahini
- 1/4 cup lime or lemon juice
- 2 tbsp olive oil
- 1 garlic clove mashed
- 1/2 tsp cumin
- salt to taste
Notes:
- There is no need to peel chickpeas with this recipe
- Add more or less lemon juice according to taste
- You can add a variety of different seasonings
- 2 tbsp chopped fresh parley (my favorite)
- 3/4 cup kalamata olives
- 3/4 cup sun dried tomatoes drained and chopped
- 3/4 cup roasted and chopped red peppers
what to do:
- Place chickpeas and the baking soda in a sauce pan and cover with plenty of water. Let it boil then reduce heat to a high simmer and let it simmer for 20 minutes. The chickpeas will be quite soft.
- Drain chickpeas and rinse with cold water for about half a minute.
- Let if drain and reserve.
- Place chickpeas, tahini, lemon juice, drained peas, garlic, cumin, and olive oil in a food processor and process to desired texture.
- Add seasonings of choice and salt to taste and process some more to blend.
Serving ideas:
- Drizzle olive oil - the classic way
- Sprinkle with sesame seeds
- Sprinkle paprika
- Chopped fresh parsley
