Split Pea Spinach Vegan Soup




It's green 💚 It's healthy 😀


what you need:

  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 1/5 litres vegetable stock
  • 300 gr split peas
  • 1 small potato cubbed
  • 1 chopped zucchini
  • 1 teaspoon dried parsley
  • 250 gr frozen spinach (or fresh)
  • salt and pepper to taste


what to do:

- Soak the split peas in cold water for at least 1 hour

- Saute onion on oil until translucent.

- Add stock, peas, potatoes, zucchini and parsley.

- Let it boil then simmer for 30 minutes.

- Add spinach and let it defrost, about 5 minutes.

- Add salt and pepper to taste.

- Blend until smooth. Imersion blender works well.

- Serve with bread or croutons.


Note: You can top the soup with steamed or sautéed cubed carrots.
