Sweet Potato Mash



Smooth and delicious. Great for a Thanksgiving meal.


what you need:

  • 1 kg/2 pounds sweet potatoes
  • 1 1/2 teaspoon salt
  • 1/4 cup finely sliced green part of green onion
  • 1/4 cup finely chopped flat leaf parsley
  • 1 garlic pressed
  • 1/4 cup sour cream
  • 2 tablespoons butter
  • salt and pepper to taste
  • 1 teaspoon extra-virgin oil


what to do:

Cook the potatoes in water with 1 teaspoon of salt. Let the water boil and then simmer uncovered for about 10 minutes or until the potatoes are soft and you can easily insert a knife through it.

Meanwhile melt the butter and sauté the garlic turning off the heat before the garlic changes color. Immediately add the green onion and parsley. 

Right after the potatoes cook, drain them and add then to the pan with butter and spices. 

Add the sour cream, olive oil, salt and pepper and use a potato masher to mash them.
