Tapioca Pudding


This is hopefully the first of many easy and healthy recipes in this blog. 
Tapioca pudim is delicious and easy to make. It's great for a snack, breakfast or even desert.


What You Need:
  • 1/2 cup small pearl tapioca 
  • 3 cups 2% milk (or full cream)
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla extract
What To Do:







Gather your ingredients.






Put milk, tapioca, sugar and salt in a medium pan over medium heat.





Stir frequently until it boils.






Turn the heat down and simmer for 10 minutes.





Turn off heat.






In a bowl beat the eggs and vanilla together with a whisk for 2 minutes.





Add 2 cups of the tapioca mix to the eggs SLOWLY to avoid curdling. Keep stirring as you add the tapioca mix.




Slowly put egg mixture in the pan and turn heat on medium for 1 minute. Keep stirring and DO NOT let it boil. 





Turn the heat to the lowest setting and let it simmer for 5 minutes. 
The mixture should be thick (pudding consistency).

Put in 7 or 8 small containers, ramekins or even recycled yogurt cups. This way you do not feel tempted to eat everything at once. I like the 'Glad' small containers because they have lids and it makes it easier to store in the refrigerator.

Add Yuminess!

Put berries on top

curdling - is when a solution like a porridge, sauce or pudding separates in lumps and pieces so it is not smooth anymore
