Insalatta Caprese / Caprese Salad

Caprese Salad or Insalata Caprese is addictive. The flavors and textures of this salad will make you hum, hum again and ask for more. This is a classic Italian salad that combines tomato, fresh mozzarella, and basil. They are also a three musketeers salad as the three main ingredients work so well together.

Carrot Ricotta Sandwich or Spread

Carrots + ricotta + mayonnaise make a great dip or filling for a sandwich.

Friday

Chicken with Honey and Mustard Sauce

This chicken has rich flavors. It's sweet because of the honey and also sharp and pungent because of the mustard. The soy sauce brings a pleasant savory taste and the mayonnaise blends it all together harmoniously.

Wednesday

Ridiculously Easy Cabbage Soup

I promised I was going to post a ridiculously easy version of the cabbage soup and here it is.

This is a true bachelor's dish. You will not feel that you are cooking. It's almost like cheating cooking.

You just need to buy 3 things and put them together. That's it! And like the not so easy version of cabbage soup it is lean and healthy.

I got all three ingredients at Trader Joe's and the measurements are perfect. Nothing to add and nothing to put away. You will use it all. You can find the same things in other markets.

What You Need:

  • 1 carton chicken broth 32oz
  • 1 bag shredded cabbage 10oz
  • 1 bag Vegetable Medley 12oz

Instead of the chicken broth you can use 4 cups water and 2 cubes of chicken bouillon.

What To Do:

Wash the cabbage under running water. Use a colander or sifter. Reserve.

You can use the veggies as they come in the package but I prefer to cut them in smaller pieces. Bachelors can easily skip this step.

Put everything in the pan.
The broth.

The cabbage.

The veggies.

Bring it to a boil.

Reduce heat to the lowest setting and cover the pan.
Let it cook for 25 minutes.
Check if it has enough salt.
You can also add a little black pepper.

Bon Appétit!
