Arroz de Forno / Chicken and Rice Casserole
Whenever we had chicken left overs at home we would have 'Arroz de Forno' for the next meal. We loved it so much that we didn't want to eat the whole chicken in a given meal just to have some left overs for the delicious 'Arroz de Forno'. It is basically a mix of rice, vegetables, chicken left overs of course. and the magic ingredient, Parmesan cheese.
This recipe is enough for 3 people, or 4 not so hungry people.
Place chicken left overs in a pan over low heat with 1/2 a cup chicken stock for 10 minutes. The pieces of chicken will soften and it will make it easier to debone it. Turn off the heat.
Remove the chicken from the pan, remove the bones and cut/shred the chicken in small pieces. Leave the juices in the pan. Put the chicken pieces back in the pan. Cover to keep it warm.
Steam 2 cups of your favorite vegetables for 8 minutes until tender. Reserve.
Either use leftover rice or make 3/4 cups of rice.
Put the rice in a big bowl.
Add the vegetables and mix. You can also add 1 can of sweet corn drained.
Add the chicken with juices and mix.
Add 1 cup shredded Parmesan and mix.
Coat an oven dish with olive oil or butter.
Put the rice in it.
Sprinkle Parmesan.
Put it in the oven to broil enough time to melt the cheese a little. About 3 minutes.
