Egg Sandwich


If you have no time to prepare a meal an egg sandwich might be a quick solution. But don't forget to add some veggies and perhaps milk for more protein.



The recipe is similar to the American 'Deviled Egg Salad' but I do not use chopped shallots or onions and neither paprika and vinegar but you can add those if you like.

What To Do:

Boil the eggs:
Put the eggs in a pan with cold water covering them for over 1 inch over medium high heat.
After the water boils, reduce the heat to the lowest setting and let it boil for 10 minutes.
Place the egg under cold water for a minute so you can handle them.




Hit the egg on a hard surface until the whole shell is cracked. Crack until you have really small pieces.






Carefully peel off the shell.







It is easier if you do it under running water.





Place the egg in a bowl and cut in small pieces.







Add 3/4 tablespoon mayonnaise.







1 teaspoon mustard.








1 1/2 teaspoon ketchup.







Salt and pepper to taste.







Dried parsley and chives (or fresh of course)







Mix it up.





Put your egg mix on a toast for a delicious open face sandwich or if you like make a whole sandwich.



To make it a decent meal add some veggies (I just love baby carrots), and have it with a glass of milk.

Quick and easy! Main meal or breakfast as you wish.
