Chicken Stew Brazilian style / Ensopado de Galinha
There are so many recipes of chicken stew and it all comes down to how you season the chicken and the spices and seasonings you use. Garlic, onion and tomato are usually the basis of my cuisine, which is very common in Brazil, at least in Rio where I come from.

Buttered Carrots with Onions
Saturday
egyptian red lentil soup / Shorbaat Aads
I love this soup and it is so so easy to make. I learned this recipe while I lived in Egypt and I adapted it to my palate. My recipe does not have cumin neither turmeric, which are common spices in Egyptian cuisine. If you like them then go ahead and add them. The most important thing is to follow you palate.
There are many versions of this soup. This is a very simple one. The way my kids like it.

Ridiculously Easy Low-fat Healthy Pan Grilled Chicken
All you need for a delicious low-fat (the magic word), healthy (another magic word), pan grilled chicken is to marinate the chicken in Soy Sauce and grill it on a grill pan. That's all. If you don't have a grill pan I highly recommend getting one.
Thursday
Ricotta and Pesto Sauce over Pasta
I love to mix pesto and ricotta cheese. To make this delicious sauce all you need is ricotta cheese and the very simple homemade Basil Pesto recipe that I posted before.
