Garbanzo Beans (chickpeas) cooked not bought in a can is a healthier option.
A can is usually about 450gr/15 ounces and they yield about 250gr (1 1/2 cups) of beans once drained.
Garbanzo beans roughly double their weight once cooked.
If you cook a 450gr/1 lb bag of garbanzo beans, you will have the correspondent of 4 cans.
First of all you need to sort and rinse the beans.
Then you need to soak them and there are two methods.
1 - QUICK SOAK METHOD:
- Place 1 lb beans in a pot and add 8 cups of hot water.
- Bring to a boil and let it simmer for 2 minutes.
- Turn off the heat, cover, and let it sit for 2 hours.
2 - OVERNIGHT METHOD:
- Place the beans in a large pot with 8 cups cold water and let them sit overnight or for at least 6 to 8 hours.
COOKING THE BEANS
Drain and rinse the beans regardless of the soaking method you used.
Add 6 cups of water to the soaked the beans and 1 teaspoon of salt.
Let it boil then simmer for about 1 to 1 1/2 hours.
I divide this batch into four. I freeze three and place the other one in the refrigerator.
Use them the same way you would used canned garbanzo beans.
