what you need:
- 3/4 cup Chickpeas (1 can drained - 250 gr)
- 3 tbsp Peanut Butter
- 2 tbsp Maple Syrup
- 3 tbsp Coconut Sugar
- 1/4 cup Almond Flour
- 1½ tsp Vanilla extract
- ¼ tsp Baking Powder
- ¼ tsp Baking Soda
- 3 tbsp Chocolate Chips
- Flakey Salt for Topping - Optional
what to do:
- Preheat oven to 350 F (180 C). Grease a 6 to 7 inch skillet.
- Place chickpeas, peanut butter, maple syrup, coconut sugar, vanilla into a food processor and blend well.
- Mix almond flour, baking powder and baking soda.
- Mix the chocolate chips reserving some to decorate the top of the cookie.
- Put the cookie dough into the greased skillet and top with the reserved chocolate chips. Bake for 20-22 minutes or until edges are golden brown.
- Sprinkle with flaky salt if desired.
- Serve by itself, with ice cream or whipped cream!
