Chickpea Peanut Butter Skillet Cookie


what you need:

  • 3/4 cup Chickpeas (1 can drained - 250 gr)
  • 3 tbsp Peanut Butter
  • 2 tbsp Maple Syrup
  • 3 tbsp Coconut Sugar
  • 1/4 cup Almond Flour
  • 1½ tsp Vanilla extract
  • ¼ tsp Baking Powder
  • ¼ tsp Baking Soda
  • 3 tbsp Chocolate Chips
  • Flakey Salt for Topping - Optional


what to do:

  1. Preheat oven to 350 F (180 C). Grease a 6 to 7 inch skillet. 
  2. Place chickpeas, peanut butter, maple syrup, coconut sugar, vanilla into a food processor and blend well.
  3. Mix almond flour, baking powder and baking soda.
  4. Mix the chocolate chips reserving some to decorate the top of the cookie. 
  5. Put the cookie dough into the greased skillet and top with the reserved chocolate chips. Bake for 20-22 minutes or until edges are golden brown.
  6. Sprinkle with flaky salt if desired.
  7. Serve by itself, with ice cream or whipped cream!
