Vegan Banana Quinoa Walnut Bake



This is a super filling and nutritious breakfast, snack or dessert.
Also a great Vegan option.


What You Need:

  • 2 large (3 medium) Bananas mashed
  • 1 cup Quinoa rinsed and drained - I like to use tricolor quinoa
  • 2 tbsp Chia Seeds
  • 2 cups Almond Milk
  • 2 tsp Cinnamon
  • 2 tsp Vanilla
  • 2 tbsp Maple Syrup – or chopped dates
  • 3/4 cup chopped Walnuts
  • dash of salt
  • 1½ to 2 cups Fresh Blueberries
Note: the batter will be very liquid.

Topping Ideas:

  • Yogurt
  • Whipped Cream (there are organic coconut whipped cream options in the market)
  • Fresh Fruit
  • Nuts


What To Do:

  1. Preheat oven to 350F.
  2. Mash the bananas in a large bowl.
  3. Add the rest of the ingredients but not the berries and mix well until all is evenly blended.









 4. Mix in the berries carefully.












5. Place in an ovenproof casserole. 







6. Bake for 60-65 minutes or until the quinoa is cooked.




7. Wait it to cool for 10 minutes then eat plain or with your favorite topping!


Notes

Store in a sealed container in the refrigerator. 

Eat cold or warm. I pop mine in the microwave for 15 to 20 seconds before eating.
