Raisins and Bananas jam or spread is a great option for a sweet snack.
But be careful. Just because this jam does not have refined sugar it does not mean sugarless. It still has sugar but not sucrose (white sugar); It's fructose, which naturally occurs in fruits and is processed in the body in a different way.
To know more about 'sugars' read THIS ARTICLE article below from BBC Health:
This recipe comes in handy when you still have a large amount of raisins you bought at Costco. (the ginormous box with two gigantic bags of raisins)
You can adjust the water to get your desired consistency, which will depend on how you plan to use this jam.
What You Need:
- 2 1/2 cups black or golden California raisins
- 1 banana broken in pieces
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 cup of water.
What To Do:
- Place all ingredients into a saucepan over medium high heat, and bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes, stirring occasionally. The raisins and bananas should be very soft after 20 minutes. Note: pay attention to the level of water. You might need to add more water depending on your simmering temperature.
- Turn off the heat and wait for about 30 minutes for the mix to cool enough to be processed.
- Use a food processor to turn the mix into a paste. You can use a Magic Bullet type processor or a hand held mixer, which is the one I used.
- Enjoy!
