what to do:
- 1 1/2 cup (180gr) almond flour
- 3/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 2 1/2 tablespoons peanut butter
- 2 1/2 tablespoons coconut oil
- 250 gr sugar
- 3 eggs
- 1 teaspoon vanilla
- 1/2 cup mini chocolate chips
what to do:
- Preheat oven to 180 C / 350 F
- Line a 20 x20 cm (8 x 8 inch) pan (or equivalent) with parchment paper and set aside.
- Whisk together flour, cocoa, salt and baking powder. (Use a sieve to add the chocolate so it will blend easily)
- In a different bowl whisk peanut butter, coconut oil, eggs and vanilla. (I use an electrical whisk to blend faster and more uniform)
- Add sugar slowly so it does not lump.
- Slowly mix the dry ingredients until well incorporated.
- Fold in chocolate chips.
- Place brownie mix into the lined baking sheet.
- Bake for 30 to 35 minutes or until a skewer comes out clean.
- Cool completely before slicing.
