Almond Flour Brownies

what to do:

  • 1 1/2 cup (180gr) almond flour
  • 3/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 tablespoons peanut butter
  • 2 1/2 tablespoons coconut oil
  • 250 gr sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 cup mini chocolate chips



what to do:

  1. Preheat oven to 180 C / 350 F
  2. Line a 20 x20 cm (8 x 8 inch) pan (or equivalent) with parchment paper and set aside.
  3. Whisk together flour, cocoa, salt and baking powder. (Use a sieve to add the chocolate so it will blend easily)
  4. In a different bowl whisk peanut butter, coconut oil, eggs and vanilla. (I use an electrical whisk to blend faster and more uniform) 
  5. Add sugar slowly so it does not lump. 
  6. Slowly mix the dry ingredients until well incorporated.
  7. Fold in chocolate chips.
  8. Place brownie mix into the lined baking sheet.
  9. Bake for 30 to 35 minutes or until a skewer comes out clean.
  10. Cool completely before slicing.
