Date Paste




Use dates paste in recipes instead of whole dates, as a sugar substitute, as a sweetener for smoothies, with yogurt, ice cream, as a spread, etc.


what you need:

  • 350 gr / 12 oz pitted dates
  • water


what to do:

Place dates in a pan with 4 cups of water to cover them. Let it boil, then simmer for 15 to 25 minutes, depending on the kind of dates you have. See note below. Drain and reserve 1 1/5 cup of liquid.

Add dates and 1 cup of the reserved liquid to a powerful food processor or blender and blend until smooth. Add more reserved liquid if necessary. It will depend of how thick you want it to be.

Keep refrigerated for up to 3 months.


Notes:

Medjool dates are softer, less chewy, and sweeter than Noor Deglet dates, but you can use either to make date paste. Deglet dates may need to simmer longer to be soft enough to blend.
