Vegan Almond Bars



Delicious almond vegan treat :)


what you need:

  • 1 cup chopped toasted almonds
  • 1/2 cup peanut butter
  • 12 Medjool dates
  • 1 1/4 cup almond flour
  • 1/3 cup sesame seeds
  • pinch of salt

The frosting with chopped almonds on top is optional. See recipe below.

what to do:

  1. Soak the dates in boiling water for 15 minutes and drain.
  2. Preheat oven to 180 C / 350 F
  3. Process dates and peanut butter until they are smooth. Add a bit of water if the mix is too thick.
  4. Put the mix in a bowl and add the almond flour, chopped almonds and sesame seeds. Mix thoroughly. You will probably need to use your hands.
  5. Divide in to 12 equal pieces and either make balls and press them or use a brownie pan or even a muffin pan.
  6. Bake for 10 minutes.
  7. You can serve as it is or you can decorate with peanut butter frosting sprinkled with crushed toasted almonds.
Notes:
12 pitted dates is about 85 grams


Optional Frosting:

what you need:
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 6 to 8 tablespoons milk or water

what to do:
  1. Use an electric mixer to combine peanut butter sugar and vanilla.
  2. Add the milk one spoon at a time until it reaches the desired consistency.
  3. You can pipe oner the bars using a ziplock bag with a small whole in one of the corners.
