Delicious almond vegan treat :)
what you need:
- 1 cup chopped toasted almonds
- 1/2 cup peanut butter
- 12 Medjool dates
- 1 1/4 cup almond flour
- 1/3 cup sesame seeds
- pinch of salt
The frosting with chopped almonds on top is optional. See recipe below.
what to do:
- Soak the dates in boiling water for 15 minutes and drain.
- Preheat oven to 180 C / 350 F
- Process dates and peanut butter until they are smooth. Add a bit of water if the mix is too thick.
- Put the mix in a bowl and add the almond flour, chopped almonds and sesame seeds. Mix thoroughly. You will probably need to use your hands.
- Divide in to 12 equal pieces and either make balls and press them or use a brownie pan or even a muffin pan.
- Bake for 10 minutes.
- You can serve as it is or you can decorate with peanut butter frosting sprinkled with crushed toasted almonds.
Notes:
12 pitted dates is about 85 grams
Optional Frosting:
what you need:
- 1/2 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 6 to 8 tablespoons milk or water
what to do:
- Use an electric mixer to combine peanut butter sugar and vanilla.
- Add the milk one spoon at a time until it reaches the desired consistency.
- You can pipe oner the bars using a ziplock bag with a small whole in one of the corners.
