what you need:
1 cup peanut butter
3/4 cup powdered sugar
1/4 cup of almond milk or any plant base milk
2 teaspoons of vanilla extract
1 cup almond flour
1 teaspoon baking soda
OPTIONAL: Vegan chocolate chips
Notes:
- if the peanut butter is not salted, add a pinch of salt
- Makes 20 to 24 cookies
- Baking powder also works instead of baking soda
- Let it cool completely before storing
what to do:
Preheat oven to 350F / 180C
Blend peanut butter and sugar in a large bowl, until smooth. You can use a whisk instead.
Add almond milk and vanilla. Blend well.
Add flour, baking soda and salt if using. Mix with a fork and when the dough gets hard, mix with your hands.
Make 1 1/5 tablespoons balls and place on a cookie sheet about 1 1/5 inches apart.
Flatten the balls with a fork making a criss cross pattern. You can also press a few chocolate chips on the cookies.
Optional: sprinkle with sugar or coarse salt.
Bake for 10 to 13 minutes.
