what you need:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon dry basil
- 1 medium garlic clove pressed
- Salt and freshly ground black pepper to taste
- 1 medium tomato cubed (any kind)
- 3/4 cups cooked French lentils or green or brown lentils
- 1/3 cup cooked shredded beets
- 1 tbsp sweet or red onion finely chopped
Notes:
You can use fresh basil instead of dry.
You can top this salad with sliced avocados.
what to do:
- Whisk together olive oil, lemon juice, garlic, basil, salt and pepper in a small bowl. Reserve.
- Put tomatoes, lentils, onion and beets in a salad bowl and mix. Add the dressing and toss to combine.
