Lentils Tomato Beets Salad


So fresh and protein rich :)

what you need:


  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice 
  • 1/2 teaspoon dry basil
  • 1 medium garlic clove pressed
  • Salt and freshly ground black pepper to taste
  • 1 medium tomato cubed (any kind) 
  • 3/4 cups cooked French lentils or green or brown lentils
  • 1/3 cup  cooked shredded beets
  • 1 tbsp sweet or red onion finely chopped


Notes:

You can use fresh basil instead of dry.

You can top this salad with sliced avocados.



what to do:


  1. Whisk together olive oil, lemon juice, garlic, basil, salt and pepper in a small bowl. Reserve.
  2. Put tomatoes, lentils, onion and beets in a salad bowl and mix. Add the dressing and toss to combine.
