Butternut Squash Sweet


This is my adaptation of the Brazilian 'doce de abóbora'. I used butternut squash and it tastes really good! Butternut squash is a wonderful healthy 'fruit' but the sugar in this recipe kind of 'defies' its 'healthyness'. So eat it sparingly.

What You Need:
  • 1 butternut squash
  • 1/2 cup sugar (if you like it sweet put 3/4 cups)
  • 1/2 cup water
  • 1 cinnamon stick
  • 2 whole cloves

Optional: 1/2 cup coconut flakes

What to Do:




Peel and cut the butternut squash in cubes.





Add sugar and water.






Add cloves and cinnamon stick.






Let it boil. Then cover the pan reduce heat to low and let it simmer for 45 minutes.
Add more water if it gets too dry.





Using a spoon or a potato masher, mash the butternut squash to your liking.



Remove cinnamon stick and cloves. Actually you should do this before mashing the butternut squash.



I love it with cheese. The contrast between the sweet and salt is quite pleasing. Any processed cheese will go well with this sweet.  Ricotta cheese is another great option.






You can also have it with vanilla ice cream for total sweetness.
