Lentils


Lentils are a legume, which means they are part of the bean family. They are a great way to get a good daily dose of proteins. About 30% of lentils calories are from protein. Lentils have the third highest level of protein of any legume or nut.



Many lentils recipes call for bacon or 'linguiça' a kind of sausage but I do not like them and I think they add unnecessary fat to the lentils.

What You Need:

  • 1 cup lentils
  • 1 onion chopped
  • 1 cup shredded carrots
  • 2 tomatoes chopped
  • 1 tablespoon chives (dry or fresh)
  • ½ tablespoon parsley (dry or fresh)
  • 2 1/2 cups water
  • 1 cube chicken bouillon
  • salt and pepper

What To Do:





Put oil in a large saucepan over medium heat. After the oil is hot add the onion and sauté.







Add the tomatoes








Stir until the tomatoes get soft.








Add the lentils.








Add the carrots.







And mix well.








Add water and chicken bouillon.








Add salt and pepper to taste.








Add chives.








And parsley.








Stir and let it boil.







Reduce heat and let it simmer for 40 minutes.








Serve with rice and any meat you like.
