Rice Pudding / Arroz Doce


This recipe of 'arroz doce' has become my son’s favorite desert. After many trials with different recipes and variations I came up with this recipe that is 'creeeeeammy' and has the right amount of sweetness. 



Serves 16 people (or 8 Felipes)

What You Need:
2 cups Jasmine rice (it works with any kind of rice but the Jasmine is the best in my opinion)
8 cups 2% milk (why 2%? because it reduces the crazy number of calories in this recipe)
1 can coconut milk (13.5oz can)
1 can condensed milk
1 cinnamon stick
cinnamon powder

What To Do:




Gather the ingredients.







Wash rice under running water







In a large tall pan, over medium high heat, put rice ...






… milk …






… and coconut milk.





Let it boil stirring frequently so the rice does not stick to the bottom of the pan.
Watch carefully because when the milk boils it rises quickly.






After it boils turn the heat to the lowest setting and let it simmer for 40 minutes. Stir after 20 minutes.






When the 40 minutes are over, remove the cinnamon stick ...




... add the condensed milk and turn the heat to medium high. 
Keep stirring all the time.






When it starts bubbling, stir for half a minute and then it’s ready.






Transfer to a large container that has a lid and store in the refrigerator.
Sprinkle with cinnamon powder before you serve.
