Tuna Avocado Salad / Sandwich

This recipe can be used for a tuna salad or to make a tuna sandwich.
It can be a main course as tuna is a great source of protein.

What You Need:
  • 1 avocado chopped
  • 3 tablespoons light mayonnaise
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Dijon mustard
  • 1 tomato finely chopped
  • 4 teaspoons chopped shallots or red onion finely chopped
  • 1 can (5 oz.) tuna drained and flaked (better to use tuna in Spring Water)
optional: 1 teaspoon hot sauce like Tabasco

A plate with a bed of lettuce leaves and sliced cucumber. I like the Persian cucumbers.

Serves 2

What To Do

Gather your ingredients.
Prepare the lettuce bed with cucumbers.

Mix mayonnaise, mustard and lemon juice in a small bowl.
If using a hot sauce add it to the mix.

In a larger bowl place all the other ingredients and add the mayonnaise mix.

Mix everything.
Then taste to see if you want to add salt and pepper.

Arrange the tuna salad on a bed of lettuce leaves surrounded by cucumber slices.

or put it over your favorite toast bread.

You can put another slice on top for a full sandwich.
