my big fantastic greek salad


Greek Salad

I absolutely love this salad. It's BIG, serves 8 -10. It's fantastic because it's delicious, hearty and healthy.  And it's Greek, well mostly Greek because Greek Salad originally do not have lettuce and mine does. Crispy Romaine lettuce is just a perfect addition. Honestly this is one of the best Greek Salad recipes you will ever encounter.

The salad dressing is delicious and can be made by itself to go with other types of salads especially garden and toss salads.

Greek Salad is a must during summer, especially if you can get super fresh veggies at your local farmer’s market.


Greek Salad

This salad goes well with a slightly cold Pinot Grigio.

Serve 8-10

what you need:

for the salad:
  • 1 head romaine lettuce, rinsed, drained and torn in bite size pieces
  • 6 plum tomatoes, peeled, seeded and cubed (about 2 cups)
  • 1 or 2 English cucumbers, peeled and cubed (scoop out some of the seeds) (about 2 cups)
  • 1 medium red onion (about 1 cup)
  • 1 small green pepper (about 1 cup)
  • 1 cup pitted black olives
  • 1 cup crumbled feta cheese (about 4 to 5 oz)



for the salad dressing:



  • 3/4 cup extra virgin olive oil
  • 2 tablespoons of lemon juice (freshly squeezed)
  • 2 tablespoons red wine vinegar
  • 2 medium garlic cloves, minced or use a garlic press
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/4teaspoon salt
  • 1 1/2 teaspoon honey
  • 1/4 teaspoon ground black pepper to taste




what to do:
If you are having your salad with a Pinot Grigio put it in the refrigerator while you make the salad.

Whisk everything together until well combined or use a food processor.
Put it in the fridge.

Prepare all ingredients.




Rinse each leaf of the romaine lettuce and torn into small pieces. Use a salad spinner to dry it or let it stand in a colander while you prepare the rest.










Cut the onion in quarters.












Slice the onion thinly and soak the slices in ice water while you cut the cucumber, tomatoes, and peppers.









Peel, core and cube the tomatoes. Here is a tutorial on how to do it. Place the cubed tomatoes in a bowl.











Peel the cucumbers and cut in half. Spoon some of the seeds out. Cut the cucumber in small cubes.
Add to the tomatoes.









Cut the ends off the pepper and remove the seeds.
Cut the pepper in thin strips. Add to the tomato and cucumber.








Strain the onion and pat dry with paper towel.
Add to the tomatoes, cucumbers and pepper.








Now that you have all ingredients ready notice that the volume of lettuce is basically the same as the volume of all veggies combined.











Add the salad dressing to the veggies.












Add the lettuce, olives and feta cheese and toss.

Have all ingredients ready.
Mix onions, tomatoes, cucumbers, and bell pepper.
Add the salad dressing and toss.
Carefully fold olives and feta cheese.

para fazer o molho da salada

do que você precisa:
  • 3/4 xícara de azeite de oliva
  • 2 colheres de sopa de suco de limão
  • 2 colheres de sopa de vinagre de vinho tinto
  • 2 dentes de alho tamanho médio bem picadinhos ou use espremedor de alho
  • 2 colheres de sobremesa de orégano
  • 1 colher de sobremesa de manjericão desidratado(alfavaca)
  • 1/4 colher de sobremesa de sal
  • 1 1/2 colher de sobremesa de mel
  • 1/4 colher de sobremesa de pimenta do reino
o que fazer:

Misture tudo muito bem usando um fouet (batedor de mão) ou use um processador de alimentos.
Coloque o molho na geladeira enquanto prepara o resto da salada.


para fazer a salada

do que você precisa:
  • 1 cabeça de alface romana lavada, escorrida e quebrada em pedaços pequenos (corte/pique a alface com as mãos)
  • 6 tomates, sem pele e sem semente cortados em cubos (mais ou menos 2 xícaras de tomates picados) 
  • 2 pepinos médios descascados, sem sementes e cortados em cubos (em torno de 2 xícaras)
  • 1 xícara de cebola vermelha cortada bem fina (mais ou menos meia cebola média) 
  • 1  xícara de pimentão verde cortado em tiras finas (mais ou menos 1 pimentão)
  • 1 xícara de azeitonas pretas sem caroço 
  • 1 xícara de queijo tipo Feta em cubinhos (em torno de 130 gramas)
o que fazer
Prepare todos os ingredientes antes de começar a misturar a salada.
Misture a cebola, tomate, pepino e pimentão.
Adicione o molho de salada que está na geladeira.
Misture com cuidado as azeitonas e o queijo Feta.
