Easy Oven Eggplant



Treat this eggplant like a pizza and choose you favorite toppings to add to the eggplants. In the picture above I used tuna and sliced onions besides the basic ingredients.


what you need:

  • 2 eggplants washed and cut in half
  • Olive oil
  • salt
  • your favorite tomato, pizza or pasta sauce
  • small chunks of mozzarella or your favorite soft cheese
  • 4 tablespoons shredded Parmesan 
  • green olives sliced
  • Toppings of your choice: Examples:
- Shredded tuna
- Anchovies
- thinly sliced onion
- sliced bell peppers
- sliced tomatoes
- basil leaves


what to do:

Preheat oven to 220 C / 425 F.

Make checker pattern cuts on the eggplant.

Season with olive oil and salt.

Put in the oven for 30 minutes.

Remove from the oven and spread with your favorite tomato sauce. 

Add cheese bits.

Add any toppings of your choice.

Top with parmesan and olives.

Place in the oven for 10 more minutes.
